Beef – there are so many places I could go with this one word and I am just getting hungry thinking about the great food that comes from the cow.
Two of my favorite comfort foods made with beef are sloppy joes with tater tots or a big steaming bowl of chili with piping hot cornbread. I live in Texas and it is that it is sacrilege to have beans in your chili. I disagree and I make a mean pot of chili that is chunky and chock full of 8 different types of beans. Not to brag but every year for the last 14 years some of Cruz’s colleagues start asking about this time when are they getting their chili.
You can never go wrong with a deliciously moist meatloaf with fresh mashed potatoes and steamed fresh green beans. But if you ask my 10 dogs, they would tell you that they love it when there is a doggie birthday because there is always a meatloaf birthday cake made simply with ground beef, bread, eggs, milk and peanut butter, then iced with plain vanilla frosting with writing on it in either peanut butter or catsup.
A fancy dinner could be some spaghetti with herbed meatballs with grilled asparagus. There is always the old stand by that you can make in a skillet, on the grill or just go to your favorite fast food or full service sit down joints. Of course I am talking about the hamburger no matter how you like it. My favorite fast food joint is WHATABURGER made famous right here in Texas. My favorite full service sit-down joint is in Seabrook, Texas and me and my family go there at least twice a year when I go home to visit. When I worked there in the mid 1980’s it was S.W. Tookie’s but since Hurricane Ike tore them up in September 2008 they now go by Tookie’s Burgers and they have by far the best handmade onion rings still made the same way Mama Ethel did back int the day along with the best bean burger anywhere.
So now that I have made you hungry, that’s “What’s Rattling My Cage!!”
